Galette with Persimmons
The four basic ingredients of this simple French dessert are flour, sugar, butter, and fresh fruit. Add a bit of marmalade and grated lemon zest, and you have everything you need to prepare it.

Ingredients
Dough

260 g Wheat flour, white, multi-purpose

0.25 teaspoons Salt, table

170 g Butter, unsalted

4 spoon Water

60 ml Marmalade, orange

700 g Persimmon

3 spoons Sugar, white

1 teaspoon Lemon zest, fresh

2 spoons Milk, whole milk

Sift the flour into a bowl and mix it with salt. Add the cold butter, cut into cubes, to the mixture. Quickly rub the butter into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Add cold water and quickly knead everything together to form a dough. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for one hour (if the dough is too dry, add one or two more tablespoons of cold water).

Preheat the oven to 220 degrees Celsius. Line a low baking dish with parchment paper. Wash the persimmons, dry them, and slice them into 4 mm thick slices. Toss the slices in a bowl with two tablespoons of sugar and grated lemon zest.

Take the dough out of the refrigerator and roll it out on a lightly floured surface into a circle about 4 mm thick. Carefully transfer it to the prepared baking dish and spread marmalade over it, leaving about 3 cm of the edge uncovered. Arrange the persimmon slices on top of the marmalade, slightly overlapping them. Fold the uncovered edge of the dough towards the center, partially covering the fruit. Brush the dough with milk and sprinkle with the remaining sugar.

Bake the galette in the preheated oven for 20 minutes, then reduce the temperature to 190 degrees Celsius and bake for another 20 minutes, or until the crust is golden brown.

Let the galette rest for 10 minutes before slicing and serving. Serve with a dollop of whipped cream or a scoop of ice cream.
