Galette with Plums and Almonds
If you like pies but usually avoid making them because the process seems too complicated, a galette will be an excellent choice for you. Simply roll out the dough, place the fruit or vegetables in the center, fold the edges over the filling, brush with beaten egg, and bake it in the oven. Like a pie, a galette is best when its still slightly warm, served with a scoop of good vanilla ice cream.

Preheat the oven to 180 degrees Celsius. Place the blanched almonds on a baking sheet and roast them in the preheated oven for 13-15 minutes until golden brown. Shake the baking sheet several times during roasting to ensure the almonds toast evenly and do not burn. Transfer the roasted almonds to a plate and let them cool.

Place the cooled almonds in a food processor and grind them finely. Mix them with flour, sugar, and salt. Add the cold butter cubes to the mixture. Use your fingertips to work the butter into the dry ingredients, lifting the mixture to make it airy and crumbly. Then add just enough cold water to bring the ingredients together into a uniform dough. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for 30-60 minutes.

Increase the oven temperature to 190 degrees Celsius. Line a low baking sheet with parchment paper. Wash, dry, and pit the plums. Cut them into thick slices.

In a small bowl, beat the egg and mix it with milk. In another bowl, mix together the melted butter, honey, vanilla extract, and cinnamon. Take the chilled dough out of the refrigerator and roll it into a large circle, about 30 centimeters in diameter. Transfer the dough to the baking sheet and sprinkle the almond flour (ground almonds) over it, leaving about 5 cm of the edge empty. Arrange the plum slices over the mixture and brush them with the butter, honey, vanilla, and cinnamon mixture. Sprinkle the almond slices over the plums, then fold the uncovered edge of the dough towards the center, partially covering the filling. Brush the dough with the beaten egg and sprinkle the entire galette with sugar.

Bake the galette in the preheated oven for 45-50 minutes. It is done when the plums are completely softened and the dough is golden brown. Let it rest for 10 minutes before serving to make it easier to cut into slices.
