Ingredients

1 bouquet Parsley, fresh

1 twig Spices, ginger, ground

2 piece Garlic, fresh

2 teaspoons Oil, olive

1 pinch Salt, table

2 piece Egg, egg yolk, fresh

40 g Butter, unsalted

4 slice Bread, wheat

150 g Cheese, groats
Steps

First, wash, shake dry, and finely chop parsley, savory, and thyme. Separate the garlic cloves and peel them. Quickly sauté them in a pan with two to three tablespoons of olive oil along with the chopped parsley, savory, and thyme. Be careful not to let the cloves turn yellow, as garlic can develop a bitter taste.

Pour about one and a half liters of water into a pot, add the sautéed garlic and herbs, season with salt to taste, and cook over medium heat for about 30 minutes.

Melt the butter in a small cup. In a bowl, whisk the egg yolk and mix in a bit of the cooled melted butter. Strain the soup, remove the garlic, and carefully whisk in the egg yolk and butter mixture. Be careful not to form lumps.

Return the soup to the heat and warm it over low heat, but do not let it boil.

Toast slices of bread, place them in suitable bowls, pour the soup over them, and sprinkle with cheese.
