Garlic Soup with Potatoes

Ingredients
Bread cubes

3 slices Bread, wheat

2 spoons Oil, olive

1 piece Onion, raw

2 piece Garlic, fresh

120 ml Alcohol, Wine, White

2 piece Potatoes, white

1 l Soup base, chicken, cube

120 ml Sweet cream

Peel the onion and garlic, then finely chop them separately.

Heat oil in a large pot and first sauté the chopped onion until translucent. Add the garlic and cook together with the onion over low heat for 6-7 minutes, stirring occasionally, until they become tender and golden brown. Be careful not to burn the garlic.

Pour in the wine and let it simmer over moderate heat for 2-4 minutes, allowing the alcohol to evaporate. If you prefer not to use wine, you can simply skip this step.

Peel the potatoes and cut them into chunks, then add them to the pot. Pour in the chicken stock and wait for the liquid to come to a boil. Partially cover the pot and simmer the soup gently until the potatoes are tender. Season with salt and ground pepper while cooking.

Remove the pot from the heat and blend the soup until smooth using an immersion blender. Add the sweet cream, return the pot to the heat, and let the soup simmer gently for about 5 more minutes. Before serving, check if it is properly seasoned.

While the soup is cooking, prepare the bread cubes. Cut the bread slices into smaller pieces. Toss them in a pan and drizzle with olive oil. Toast them over medium heat, stirring occasionally, until they turn golden brown and become crispy.

Serve the prepared soup in deep bowls or soup plates. Top with the toasted bread cubes and serve the dish immediately.
