Gerbeaud Cubes
Delicious pastry made up of layers of dough and apricot jam mixed with ground walnuts. The finishing touch is a chocolate glaze poured over the top layer. This pastry is also known as žerba, žerbo šnite, walnut slab, and walnut cubes, originally called gerbeaud cake and renowned as one of the most popular Hungarian pastries.

Ingredients
Dough

400 g Flour, Wheat, bread flour

7 g Yeast, dry

100 g Sugar, white

100 ml Milk, whole milk

1 pinch Salt, table

1 piece Egg, fresh

150 g Butter, unsalted
Filling

200 g Marmalade, orange

1 spoon Alcohol, Rum

Steps

In a large bowl, sift the flour and remove 2 tablespoons, which you add to a smaller bowl and mix with 50 g of sugar and dry yeast. Pour in lukewarm milk and mix the ingredients well. Let the mixture stand at room temperature for 10 minutes to allow the yeast to rise and foam.

Meanwhile, add salt and the remaining sugar (50 g) to the sifted flour. Make a well in the center and pour in the risen yeast. Add the beaten egg and the cold butter cut into cubes or slices.

Knead the ingredients in the bowl well until you get a smooth and non-sticky dough. Divide it into three equal parts, place them on a plate, cover with transparent food wrap, and let them rest at room temperature for 30 minutes.

Add a tablespoon of rum to the apricot jam and heat it. Remove from heat and mix in the ground walnuts and vanilla sugar. Preheat the oven to 180 degrees Celsius. Lightly grease a rectangular baking pan (25 x 35 cm) and dust it with flour (remove excess flour).

Take one piece of dough and roll it out thinly on a lightly floured work surface. The dough should be large enough to completely cover the bottom of the baking pan.

Place the rolled-out dough in the baking pan, prick it with a fork, and spread half of the apricot jam and ground walnut mixture over it.

Take the second piece of dough and roll it out to the size of the baking pan. Place it in the pan, prick it with a fork, and spread the remaining jam and walnut mixture over it. Place the third rolled-out piece of dough on top and prick it several times with a fork.

Bake the pastry in the preheated oven for about 30 minutes. Once baked, remove it from the oven and let it cool for 15 minutes.

Make a smooth chocolate glaze from butter and chopped chocolate, let it cool slightly, then pour it over the top of the pastry. Refrigerate for one hour to allow the glaze to cool and set, then cut the pastry into pieces, serve on a plate or platter, and enjoy.
