German Quark Cake
Have you ever tried Eierschecke? Its a very juicy and delicious dessert, typical of eastern Germany, usually consisting of three layers: a base of yeast dough, a quark cream layer, and a light, biscuit-like top layer. This time we present a version without the bottom layer. The dessert is very juicy and tasty, and it will also impress you with its simple preparation.

Ingredients

Steps

Preheat the oven to 180 degrees Celsius. Grease a round baking dish (26 cm in diameter) with butter and optionally sprinkle with breadcrumbs or cookie crumbs.

In a bowl, combine the quark with eggs, sugar, and vanilla pudding. Mix the ingredients well with an electric mixer to form a uniform mass, then pour it into the baking dish and spread it evenly over the entire surface, smoothing the top.

Crack the eggs and separate the whites and yolks into two bowls. Beat the egg whites into stiff peaks, gradually adding sugar. Once you have a very firm and glossy meringue, stop mixing.

Add the pudding powder and 100 ml of milk to the egg yolks. Mix with a hand whisk until you get a completely smooth mixture without lumps.

Pour the remaining milk (275 ml) into a saucepan and bring it to a boil. Slowly mix the yolk-pudding mixture into the hot milk. Cook for another 1-2 minutes while continuously stirring until the mixture thickens, then remove the saucepan from the heat and stir in the butter.

Let the pudding cool slightly, then slowly and gradually fold in the egg white meringue. Carefully spread the prepared mixture over the quark layer, smoothing the top.

Place the baking dish in the preheated oven for 60-90 minutes. Let the cake cool before serving. Once cooled, dust with powdered sugar, cut into slices, and serve.
