Ghost Meringues
For the spookiest night of the year, we can prepare cozy little ghost meringues that will brighten the party and delight us.

Ingredients

5 pieces Egg, egg white, fresh

115 g Sugar, white

115 g Powdered sugar

50 g chocolate, dark
Steps

Place the egg whites in a bowl and use a hand mixer to beat them into stiff peaks. Gradually add granulated sugar spoon by spoon while mixing. The meringue is ready when it forms soft peaks that slowly droop.

Once all the sugar is used, stop mixing. Sift a third of the powdered sugar over the egg whites and gently fold it into the meringue mixture using a whisk. Repeat the process until all the powdered sugar is used.

Preheat the oven to 110°C. Line a baking tray with parchment paper. Transfer the meringue into a piping bag. Pipe small ghost shapes onto the parchment paper. Leave at least 3 cm of space between each ghost.

Place the baking tray with the ghosts into the preheated oven and bake for about an hour. Turn off the oven and leave the ghosts inside with the oven door slightly open until they cool down.

Once cooled, remove the ghosts from the oven. Melt dark chocolate in a small bowl and use it to draw eyes and mouths on the ghosts. Arrange the ghosts on a serving plate and serve.

Advice
The meringue ghosts will keep in an airtight container for up to 2 weeks. If we freeze them, they will stay tasty for up to one month. Before adding sugar to the egg whites, we can mix in a teaspoon of cream of tartar or cornstarch. This will make the mixture smoother and firmer.
