Steps
-
First, prepare the base. In a bowl, mix butter cookies, gin, tonic, and melted butter. If the mixture seems too runny, add a few more cookies. Spread the mixture into the glasses and press it down slightly with a spoon to create a base on which we will layer the cream.
-
Prepare the gelatin according to the instructions on the packet. Mix the milk spread with mascarpone, then add gin, tonic, powdered sugar, and lime juice. Add the melted gelatin and mix the cream well. Using a piping bag, pipe the cream onto the cookie base and let it cool thoroughly.
-
Finally, prepare the jelly. Prepare the gelatin according to the instructions on the packet. Heat gin, tonic, lime juice and zest, sugar, and juniper berries until the sugar dissolves. If you want a more intense color, add a bit of green food coloring. Remove from heat and add the soaked gelatin. Mix well until all the gelatin is completely dissolved. Let the jelly cool to room temperature, then pour it over the cream.
-
Chill the dessert well in the refrigerator. Decorate as desired before serving.
