Gingerbread Holiday Cookies

Ingredients

200 g Powdered sugar

6 spoon Butter, unsalted

150 g Sugar, brown

1 piece Egg, fresh

120 ml Molasses

2 teaspoons Vanilla, extract, natural
Steps

In a bowl, sift the flour, baking soda, and baking powder. Add the spices and mix the ingredients well.

Using an electric mixer, cream together the softened butter, egg, and brown sugar. Mix in the molasses and vanilla extract, then finally add the mixture of dry ingredients. Once a uniform, smooth, and slightly soft dough is formed, stop mixing. Divide the dough into two parts, wrap each in plastic wrap, and let it rest at room temperature for 2 to 8 hours.

Preheat the oven to 190 degrees Celsius. Line a baking sheet with parchment paper, and lightly flour the work surface. Take one part of the dough, unwrap it, and lightly flour it. Also flour the rolling pin, then roll out the dough to a thickness of 6 mm. Use cookie cutters to cut out shapes from the dough, place them on the baking sheet, and bake in the preheated oven for 7 to 10 minutes (the less time they bake, the softer the cookies will be).

While waiting for the cookies to bake, roll out the second part of the dough on the floured work surface and cut out cookies of any desired shapes.

Transfer the baked cookies to a wire rack and let them cool. Place the remaining cookies on the baking sheet and bake them in the preheated oven.

Mix the powdered sugar and egg white until smooth to create a thick, paste-like mixture. Transfer it to a piping bag and use it to decorate the cooled cookies. Wait for the sugar glaze to completely harden (about one hour), then arrange the cookies on a plate or platter and serve.

Advice
The sugar glaze can be colored with food coloring, and optionally, you can add 1 to 2 teaspoons of rum or lemon juice. Vanilla extract can be purchased or made at home.
