Ingredients

220 g Butter, unsalted

550 g Honey

1200 g Wheat flour, white, multi-purpose

15 g Cocoa, powdered, sweetened

160 g Powdered sugar
Steps

Place a larger pot on the stove, in which you add 200 g of raw butter, honey, sugar, gingerbread spices, and cocoa. Heat the ingredients while stirring over moderate heat until the sugar dissolves. Then let the mixture cool.

Sift the flour and baking powder into a larger bowl, add salt, beat in two eggs, and add the honey mixture. Mix all the ingredients by hand into a smooth dough. Cover the dough and let it rest at room temperature overnight.

Cut out gingerbread man templates from cardboard and preheat the oven to 200 degrees Celsius. Grease a baking tray with 20 g of butter. Roll out the dough on a floured work surface to half a centimeter thick and cut out shapes. Carefully transfer the shapes to the baking tray and bake in the middle of the oven for about 15 minutes. Remove the still warm gingerbread cookies from the tray and let them cool.

Make icing sugar glaze from powdered sugar and one to two teaspoons of egg white. Pour powdered sugar into a small bowl, add egg white, and mix until you get a sticky paste. Decorate the gingerbread cookies with the icing and wait for it to harden. Arrange the cookies on a tray and serve to your guests.
