Glass Cookies
A great decoration or sweet surprise for the holidays. When you hang them on the Christmas tree, the light will beautifully reflect through the sugar glass in the center of the cookies.

Ingredients

110 g Butter, unsalted

110 g Sugar, white

55 g Sugar, brown

1 spoon Sugar, maple

0.5 teaspoons Vanilla, extract, natural

1 piece Egg, fresh

450 g Wheat flour, white, multi-purpose

0.5 teaspoons Salt, table

0.75 teaspoons Baking powder

Steps

In a large bowl, place butter, white sugar, and brown sugar. Mix everything well with an electric mixer for about 2 minutes until a fluffy mixture forms. Then add vanilla and molasses to the bowl. Mix everything well. Add the egg and mix for another 2 minutes on medium speed until you get a smooth and light mixture.

In another clean bowl, sift the flour, baking powder, and salt. Gradually add the dry mixture to the butter mixture while mixing slowly with the mixer. Transfer the prepared mixture to a work surface and knead it into a firm dough. Divide the dough into 2 parts and shape them into balls. Wrap each ball in plastic wrap and place them in the refrigerator for at least 2 hours.

Meanwhile, unwrap the candies and sort them by color. Place candies of the same color in a clear bag and crush them into small pieces using a kitchen mallet.

Take the dough balls out of the refrigerator, unwrap them, and place each on its own parchment paper. Flatten each ball, then cover with a new layer of parchment paper and roll it out to 0.5 cm thick. Use cookie cutters to cut out cookies from the dough. Line a baking sheet with parchment paper and place the cut-out cookies on the sheet about 2.5 cm apart. Use a smaller cutter or knife to cut out the center of each cookie.

Make a small hole at the top of each cookie using a toothpick, through which you can later thread a decorative ribbon. Sprinkle the crushed candies into the center of the cookie where the dough was cut out. You can use one color or a mix of different colors.

Preheat the oven to 190°C. Place the baking sheet with the cookies in the preheated oven and bake for 10 minutes. When the cookies turn slightly brown and the candies are melted, remove the baking sheet from the oven. Let the cookies cool in the baking sheet for another 10 to 15 minutes so the candies cool, harden, and bond well with the cookie. Then transfer them to a wire rack to cool completely.

Thread a ribbon through the hole in the cooled cookies and use them to decorate the Christmas tree or place them on plates and serve.
