Glazed Cherries

450 g cherries, fresh

0.5 piece Lemon, fresh, without shell

Wash the cherries, remove the stems, and pit them. Wash the lemon and cut it in half. In a large bowl, mix sugar and water with a whisk. Place the bowl over medium heat and heat the liquid while stirring constantly. When it boils, add the cherries and half of the lemon, reduce the heat, and simmer slowly for 20 minutes until the sugar syrup becomes thick and red.

Remove the bowl from the heat. Discard the lemon, strain the cherries, and transfer them to a container with a lid, where they should rest overnight. Reserve the strained sugar syrup.

The next day, in a clean large bowl, mix the strained sugar syrup and apple juice. Place the bowl over medium heat and wait for the mixture to boil. Let it boil for 5 minutes, then add the cherries, reduce the heat to low, and cook until the syrup becomes very thick. Remove the bowl from the heat. Line two large shallow baking dishes with parchment paper, then spread the cherries in syrup on them. Wait until they are completely cooled.

Transfer the glazed cherries to a serving bowl and serve them or store them in a jar with a lid.

Advice
