-
4 pods Garlic, fresh

Sauce
-
1 spoon Butter, unsalted
-
4 spoon Ketchup
-
2 spoons Vinegar, balsamic
-
1 spoon Worcestershire sauce
-
1 spoon Honey
-
0.25 teaspoons Spices, coriander - seeds
-
0.25 teaspoons Spices, pepper, red or cayenne
-
pieces Salt, table
Steps
-
Rinse the pork ribs under running water and thoroughly dry them with paper towels. Lightly season them with pepper and salt, place them in a deep bowl, and pour white wine over them. Cover the bowl and refrigerate for at least 2 hours (preferably overnight).
-
Preheat the oven to 160°C (320°F). Arrange the marinated ribs in a greased baking dish, drizzle with a little oil, and bake in the preheated oven for 45 minutes. Turn the meat halfway through baking.
-
While the meat is baking, prepare the potatoes. Peel and wash them, then cut each potato into 4 to 8 wedges (depending on the size of the potatoes). Boil the wedges in lightly salted water until they are almost fully softened (be careful not to overcook them). Drain the wedges, transfer them to a bowl, mix with butter, and season with pepper and salt.
-
After 45 minutes of baking, remove the baking dish from the oven and add the potato wedges and crushed garlic cloves. Increase the oven temperature to 180°C (356°F). Return the baking dish to the oven for 10 minutes.
-
In a small saucepan, melt the butter. Add ketchup, Worcestershire sauce, balsamic vinegar, honey, and spices, mix well, and cook over moderate heat for a few minutes until the sauce thickens.
-
After 10 minutes of baking, remove the dish from the oven. Increase the temperature to 200°C (392°F), and generously brush the ribs with the prepared sauce (using a brush). Return everything to the oven and bake for another 10 minutes, turning the ribs halfway through to ensure even browning on both sides. Serve the dish with a bowl of salad.
