Gluten-Free Alfajores Cookies
Delicate cookies that will melt in your mouth. Their special feature is that they use cornstarch instead of flour, making them gluten-free. You can prepare the dough very quickly and use any filling you like; in our case, its dulce de leche.

Ingredients

4 pieces Egg, egg yolk, fresh

50 g Sugar, white

320 g Koruzni škrob

0.5 teaspoons Alcohol, Rum

Steps

Preheat the oven to 180 degrees Celsius. Line a baking sheet with parchment paper.

Place the egg yolks and both sugars in a bowl and beat for about 3 minutes. Add the butter and mix just enough to combine the ingredients.

Add half of the cornstarch and mix, then add the remaining cornstarch and baking powder and mix again. Finally, mix in the lemon zest and, if desired, the rum.

Transfer the dough to the counter and quickly knead it. If it's too wet, add a bit more cornstarch; if it's too dry, add one or two tablespoons of milk.

Roll out the dough on parchment paper to a thickness of no more than 0.5 centimeters and cut out circles about 5 centimeters in diameter. Transfer them to the baking sheet, leaving a little space between them.

Bake the cookies in the preheated oven for 8 minutes, then let them cool.

Spread or pipe dulce de leche (or another filling of your choice) onto half of the completely cooled cookies. Cover with the remaining cookies and gently press them together so that the two cookies stick together.

Dulce de leche is a sweet caramel spread that is a popular treat in Latin America. It is used as a spread for bread, pastries, cakes, pancakes, and as a filling for cookies. Due to its pleasant caramel flavor, it also works well as an addition to creams, custards, and ice cream. If dulce de leche is not available in your local store, you can make it yourself. All you need is a can of sweetened condensed milk, a pot, a clean kitchen towel, and water. Place a clean kitchen towel at the bottom of the pot, then place the can of condensed milk on top. Add enough water to completely cover the can, cover the pot, and place it on the stove. Let the can cook for about 2.5 hours, during which time the condensed milk will caramelize. Once the can has cooled, youll find perfect milk caramel inside.
