Ingredients
-

-
200 g Butter, unsalted
-
180 g chocolate, dark
-
1 teaspoon Coffee, espresso
-
2 spoons Cocoa, powdered, unsweetened
-
1 pinch Salt, table
-
2 spoons Alcohol, Whisky
-
4 pieces Egg, fresh
-
100 g Sugar, white
-
1 teaspoon Vanilla, extract, imitation
-
230 g Nuts, hazelnuts
-
pieces Sweet cream
-
pieces Candied fruit
Steps
-
Preheat the oven to 180 degrees Celsius. Lightly grease a round springform pan (22 cm in diameter) with butter, then line the bottom and sides with baking paper. Chop or break the chocolate into small pieces. Sift the cocoa powder through a fine sieve.
-
Place a saucepan with butter, chocolate, coffee, cocoa powder, salt, and brandy on the stove. Heat slowly over medium heat, stirring until all ingredients are melted and a smooth chocolate mixture is formed. Remove the saucepan from the heat and let the chocolate mixture cool for 10 minutes.
-
Using an electric mixer, beat the egg yolks, sugar, and vanilla for 5 to 7 minutes until light and fluffy. First, mix the ground hazelnuts into the beaten egg yolks, then add the cooled chocolate mixture.
-
Beat the egg whites into stiff peaks, then gently and slowly fold them into the mixture of egg yolks, hazelnuts, and chocolate in two or three additions using a hand whisk.
-
Pour the batter into the prepared pan. Use the back of a spoon or a spatula to spread it evenly and smooth the top. Bake the cake in the preheated oven for 45 to 50 minutes. The cake is done when a toothpick inserted into the center comes out clean.
-
Remove the baked cake from the oven and let it cool completely in the pan. Once cooled, transfer it to a beautiful plate or platter, dust with powdered sugar, and cut into desired-sized slices. Serve with whipped cream and fresh fruit.
