Gluten-Free Orange Cake
A juicy, aromatic, and quickly prepared cake that pairs perfectly with a cup of warm beverage. Made with polenta, oranges, and almonds, which further enhance the moistness of the final product. Since it doesnt contain a single gram of flour, it is also suitable for those who avoid gluten.

180 g Sugar, white

Preheat the oven to 170 degrees Celsius. Grease a deep loaf pan (23 x 13 cm) with butter and line it with baking paper. Grate the orange zest and rub it into the sugar with your fingers to release the essential oils and achieve a stronger orange aroma.

In a suitably large bowl, use an electric mixer to cream the softened butter and sugar. Then gradually (one by one) mix in the eggs. Mix each egg for about 30 seconds. Add the vanilla extract to the egg-butter mixture. Reduce the mixer speed and mix in the ground almonds, polenta, and baking powder.

Pour the batter into the prepared loaf pan and use a spatula (or spoon) to spread it evenly and smooth the top. Bake the cake in the preheated oven for 40 to 45 minutes. The cake is done when it turns golden brown on the surface and a toothpick inserted into the cake comes out clean.

While the cake is baking, prepare the orange syrup. In a small saucepan, mix honey and orange juice. Heat on low temperature to create a slightly thicker syrup.

Remove the baked cake from the oven and transfer it to a plate or platter. Use a wooden skewer or toothpick to poke several holes in the cake, then pour the orange syrup over it and let it cool completely. Before serving, dust the top of the cake with powdered sugar.
