Gluten-Free Potato Gnocchi

500 g Potatoes, white

50 g Flour, rice

Preheat the oven to 200 degrees Celsius. Place unpeeled potatoes, which have been thoroughly washed under running water and dried with paper towels, on a rack and bake them for about 60 minutes. If you pierce the potato with a knife, the blade should slide in easily, indicating that the potato is baked. Once the potatoes are out of the oven, cut them open to release excess moisture, then scoop out the flesh. Alternatively, you can boil the potatoes until soft, drain them immediately, let them cool slightly, and peel them. However, in this case, they will contain more moisture, and consequently, you will need to use more flour, which will affect the taste.

Sprinkle the kitchen counter with rice flour and press the potatoes through a potato ricer onto it. Beat an egg and pour it over the potatoes. Add salt and grated Parmesan, then quickly but gently knead the soft dough. If it sticks to your fingers, add a bit more rice flour.

Shape the dough into a roll and let it rest for 10 minutes. Then cut it into four pieces, gently roll each piece into a long rope, and cut into small gnocchi, about 2 centimeters long.

Place the gnocchi on a lightly floured board or plate. Optionally, roll each one over a fork or a special gnocchi board to create grooves that will hold the sauce later. However, some experienced chefs consider this step completely unnecessary.

Cook the gnocchi in salted water that is gently simmering. They are done when they float to the surface. Carefully remove them from the water with a slotted spoon and place them directly into the prepared sauce, gently stirring to coat.
