Gluten-Free Tortellini with Parmesan
Tortellini are known worldwide and are readily available pre-packaged. However, if you knew how fun and easy it is to make them, you probably wouldnt buy them. Your children can also participate in making the dough. They might not get the shapes perfect, but your little ones will be extremely proud.

Ingredients
Dough

500 g Flour, Wheat, bread flour

4 dl Water

2 spoons Oil, olive

2 piece Egg, fresh

1 pinch Salt, table
Filling

100 g Cheese, cottage cheese

100 g Sour cream

1 pinch Salt, table

50 g Cheese, Parmesan, grated

2 twigs Parsley, fresh
Steps

Thoroughly wash and dry the parsley, then finely chop it. In a bowl, sift the gluten-free flour and make a well in the center. Add the eggs, salt, and oil to the well. Pour in a little lukewarm water and use an electric mixer (with spiral hooks). Start mixing from the center and gradually incorporate the remaining flour from the edges, while adding water. Once you have a thick dough, clean the counter and flour it. Place the dough on the floured surface and knead it thoroughly. Knead until the dough no longer sticks to your hands and the surface. Roll out the smooth dough ball on the floured surface to about 3 millimeters thick.

In a bowl, whisk the egg with a fork, add the cottage cheese, salt, and sour cream, then mix until smooth. You can use a multipurpose tool to help with this.

Take a glass or round cutter (children can help here) and cut out circles from the dough with a diameter of 5 cm. Place half a teaspoon or a teaspoon of the cheese mixture in the center of each circle, then fold the dough in half to form a half-moon shape. Press the edges together firmly and fold them upwards. Join the ends together and pull them forward, away from the center, to give the tortellini their proper shape.

Place a large pot with a liter of salted water on the stove. Wait for the water to boil, then add the tortellini and cook until they all float to the surface. Drain the cooked tortellini well, serve on plates, and sprinkle with Parmesan and parsley. Serve the prepared dish with your chosen sauce.
