Gnocchi with Carbonara Sauce

Ingredients

600 g Flour, potato

1 spoon Oil, vegetable oil, canola

150 g Meat, pork, smoked bacon

400 ml Sweet cream

pieces Salt, table

4 pieces Egg, egg yolk, fresh

pieces Parsley, fresh

80 g Cheese, Parmesan, grated

Place a pot with a large amount of water on the stove to cook the gnocchi. Just before the water boils, add salt to increase the boiling power. Cook the gnocchi in the boiling water according to the manufacturer's instructions. Once cooked, drain them well and keep them warm.

While the gnocchi are cooking, prepare the other ingredients. Cut the bacon into pieces or thin slices. Rinse the parsley under running water, shake it dry, and chop it finely.

Heat oil in a pan and fry the bacon until crispy. Pour off the excess fat into a container (leaving only about a tablespoon) and add the cream. Season with pepper and salt to taste, and simmer the sauce over moderate heat. Cook for another 1 to 2 minutes while stirring constantly, until it thickens slightly.

Remove the pan from the heat and stir in the egg yolks. You can add the gnocchi to the sauce and quickly mix them, or serve the gnocchi on plates and pour the sauce over them. Garnish the dish with chopped parsley and grated Parmesan cheese, and serve immediately.
