Gnocchi with Spinach and Gorgonzola Sauce
When you dont feel like cooking but crave good homemade food, quickly prepared gnocchi with a rich and creamy sauce is definitely an excellent choice. Since the dish contains no meat, it is also suitable for vegetarians.

Ingredients

500 g Potatoes, white

400 g Spinach, raw

30 g Butter, unsalted

175 g Cheese, creamy

175 g Cheese, Gorgonzola

2 pinch Spices, pepper, black

Place a pot with a larger amount of salted water on the stove. While waiting for the water to boil, clean, rinse, and dry the spinach leaves.

Add the spinach leaves to the boiling water and cook them for 1 to 2 minutes; just enough for them to wilt and the stems to soften. Remove the blanched leaves from the pot using a slotted spoon and place them in a colander. Let them drain well.

Add the gnocchi to the boiling water and cook them for the time indicated on the product packaging.

While the gnocchi are cooking, prepare the Gorgonzola sauce. Melt the butter in a larger saucepan. Add the crumbled Gorgonzola and mascarpone, and heat everything over moderate heat, stirring occasionally, until the cheese melts and a smooth sauce forms. Season the sauce to taste with ground pepper.

Mix the well-drained blanched spinach and drained gnocchi into the prepared sauce. Stir well so that the sauce evenly coats the cooked gnocchi. Serve the prepared dish on plates and enjoy.
