Gnocchi with Tomato and Basil
A delicious and quickly prepared dish. You can mix in various ingredients, but be careful to keep it simple, as too many different ingredients can spoil the true flavor.

400 g Potatoes, white

200 g Tomato, red

1 bouquet Basil, fresh

1 handful Pine nuts

5 spoon Olives, black, in brine

1 pinch Spices, oregano, dried

1 pinch Spices, pepper, black

1 spoon Oil, olive
Steps

Place a pot with 2 liters of salted water on the stove. Bring the water to a boil and add the gnocchi. Cook them until they float to the surface (5 to 10 minutes).

While the gnocchi are cooking, wash the basil, shake it dry, and pluck the leaves from the stems. Place a pan on the stove, heat it up, and quickly toast the pine nuts. Transfer the toasted pine nuts to a bowl. Take the black olives out of the jar and drain them well. Wash the cherry tomatoes. Cut larger tomatoes in half, leaving smaller ones whole. Drain the cooked gnocchi well.

Return the pan used for toasting the pine nuts to the stove, add olive oil, and heat it slightly. Add the gnocchi to the pan and mix in the tomatoes, pine nuts, and black olives. Mix everything well. Season with pepper, salt, and oregano. Cook over moderate heat for 5 minutes, stirring constantly. Add the basil to the pan. Remove the pan from the heat and mix all the ingredients well.

Serve the dish while still warm. You can sprinkle it with Parmesan cheese and serve it with a fresh salad.
