Ingredients

250 g Wheat flour, white, multi-purpose

130 g Butter, unsalted

200 g Cheese, goat, semi-hard

300 g Bell pepper, red, fresh

Steps

Mix the flour with salt, and cut the butter into smaller pieces. Sprinkle the butter pieces over the flour. Quickly and lightly rub the fat into the flour using your fingertips, lifting the mixture to make it airy and crumbly. Add ice-cold water and cold wine, and quickly knead everything into a dough. Line the bottom and sides of a pie dish with the dough. Prick the dough with a fork in several places and let it rest in a cool place for at least 30 minutes.

Meanwhile, prepare the filling. Grate the cheese. Wash the pepper, remove the seeds, and cut it into smaller pieces. In a bowl, mix the cheese and pepper. Season the filling with salt to taste.

Preheat the oven to 180 degrees Celsius. Spread the cooled dough in the pie dish with the filling. Bake the pie in the preheated oven for 35 to 40 minutes.

Remove the baked pie from the oven and let it cool slightly. The dish can be served warm or cold.

Cut the pie into pieces of any size, place them on plates, and serve.
