Gourmet Potatoes with Herbs
Boat-shaped potatoes filled with hard-boiled eggs and a mixture of potatoes, herbs, and spices will delight gourmets. Although the dish requires a bit more effort, it impresses with its appearance and taste. It is also suitable for vegetarians.

4 pieces Potatoes, white

8 pieces Egg, fresh

1 spoon Spices, cumin seeds

1 piece Egg, egg yolk, fresh

1 bouquet Thyme, raw

1 spoon Spices, mayonnaise, dried

1 dl Milk, whole milk

20 g Butter, unsalted

1 pinch Spices, pepper, white

1 pinch Spices, nutmeg, ground

1 teaspoon Mustard

0.5 teaspoons Spices, curry powder

1 spoon Soy sauce, shoyu, less salt
Steps

Thoroughly wash the potatoes. Place them in a pot, add enough water to cover the potatoes, add cumin, and cook covered for 25 minutes. Drain the cooked potatoes.

In a smaller pot, bring water to a boil and add the eggs. Once the water boils, remove from heat and let the eggs sit in the hot water for exactly eight minutes. Rinse the eggs with cold water and drain.

Preheat the oven to 200 °C. Allow the cooked potatoes to cool slightly, then cut them in half lengthwise and scoop out the centers, leaving about half a centimeter thick walls. Place the potato halves side by side in a greased baking dish.

Wash, dry, and chop the parsley. Mash the scooped-out potato centers with a fork, mix in the egg yolk, herbs, milk, butter, and season with pepper, nutmeg, mustard, curry, and soy sauce. Mix well. Peel the eggs and place them in the hollowed-out potatoes, then cover with the potato mixture. Place the dish in the preheated oven and bake for 15 minutes. Arrange the baked potato boats on plates.
