Grandmas Fruit Pastry
Our mothers and grandmothers were true masters in the kitchen, able to create delicious and delightful treats almost out of nothing. One such treat that I fondly remember is this quick and tasty pastry, topped with cherries and drizzled with homemade jam for extra juiciness. We don’t need a scale to measure the ingredients, as we use a yogurt pot for measuring. Without the addition of jam, the pastry is drier and can easily last for a few days, but that has never happened to us. It’s very convenient for transport, so we can take it with us on outings, to work for a snack, or bring it to a picnic with good friends.

Ingredients

2 piece Egg, fresh

pieces Sugar, white

1 bag Sugar, white

1 pinch Salt, table

pieces Oil, vegetable oil, canola

pieces Wheat flour, white, multi-purpose

1 bag Baking powder

pieces Lemon zest, fresh

300 g cherries, fresh

Steps

In a bowl, beat the eggs and add a pot of sugar and vanilla sugar. Mix with a mixer until the mixture doubles in size, which takes about ten minutes.

Add milk, salt, lemon zest, and oil, mix a little more, then add the sifted flour mixed with baking powder and wheat semolina. Mix everything well to get a smooth and thick batter, which you then pour into a greased baking dish (approximately 20 cm x 30 cm in size).

Tap the baking dish to level the batter and arrange the pitted cherries on top.

Bake the pastry at 200 degrees Celsius for 30-35 minutes (depending on the type of oven). Before taking it out of the oven, check if it’s done with a toothpick. If the toothpick comes out dry, the pastry is ready.

Sprinkle the baked pastry with powdered sugar and drizzle or serve with homemade jam.

Advice
Use a yogurt pot to measure the ingredients. If you don’t have one handy, you can also use a glass or cup (with a volume of 2 dl). Instead of cherries, you can use any seasonal fruit.
