800 g Fish, sea bass

350 g Cheese, edamame

Steps

Clean the sea bass fillets, rinse them, and pat them dry with a paper towel. Generously season both sides of the fillets with salt. Peel the garlic cloves and finely chop them. Rub the fillets with garlic and drizzle them with lemon juice. Then, preheat the oven to 200°C (392°F).

In a bowl, beat an egg and mix it with cooking cream until smooth. Lightly season the mixture, add a pinch of dill and grated cheese, and mix everything well. Place a pan on the stove and slowly heat olive oil. Place the fillets in the hot oil and fry them until golden brown on both sides.

Grease a baking dish with olive oil. Arrange the sea bass fillets in the dish and pour the cheese mixture over them. Grate a little more cheese on top, then bake in the preheated oven for 25 minutes. Once the cheese forms a brown crust, remove the dish from the oven and serve the fillets on plates. Offer them with a side dish of your choice.

Advice
In the cheese sauce, you can add rosemary, parsley, or other herbs instead of dill. You can also use fillets from other fish (e.g., hake, salmon, scorpionfish…).
