Gratin Leeks with Boiled Potatoes

Ingredients

120 g Meat, pork, loaf

130 g Cheese, groats

50 g Wheat flour, white, multi-purpose

2.5 dl Milk, whole milk

60 g Butter, unsalted

1 teaspoon Mustard

6 pieces Potatoes, white

0.75 teaspoons Salt, table
Steps

Thoroughly clean and wash the leeks, then cut each stalk into 6 cm long pieces. Place a pot with a liter of salted water on the stove and add the leek pieces. Cook them over moderate heat for 15 minutes until they soften.

Meanwhile, place a new saucepan on the stove to prepare the béchamel sauce. Pour milk into the saucepan, add about 30 g of butter and flour, and stir continuously while cooking to prevent lumps. As the sauce begins to thicken, add mustard and 100 g of cheese. Season the sauce with salt and pepper to taste and mix well. Remove the saucepan from the heat.

Preheat the oven to 180 degrees Celsius. Once the leeks are cooked, remove them from the water with a slotted spoon and let them cool slightly. Wrap each leek piece with a slice of prosciutto. Lightly grease a deep ovenproof dish. Pour a little béchamel sauce into the bottom of the dish, then place the wrapped leek pieces on top. Sprinkle the leeks with the remaining cheese, then place the dish in the oven. Bake the leek rolls for about 20 minutes until the cheese melts.

Peel the potatoes, wash them, and cut them into larger pieces. Place a pot on the stove and add the potato pieces, covering them with cold water. There should be enough water to completely cover the potatoes. Salt the water and cook the potatoes for about 20 minutes.

Once the potatoes are cooked, drain them and serve on plates. Remove the gratin leek rolls from the oven and arrange them on the plates. Reheat the remaining béchamel sauce and pour it over the boiled potatoes. Serve the prepared dish at the table.
