Gratin Potatoes with Bacon
Gratin potatoes with bacon, thyme, and cheese is a delightful dish that can be served as a side or as a standalone meal with a bowl of salad. Since Slovenians are known to be big fans of potatoes, no one will be able to resist this delicious baked treat.

150 g Meat, pork, smoked bacon

30 g Cheese, Parmesan, grated

Steps

Preheat the oven to 190 degrees Celsius. Peel and finely chop the shallot. Cut the bacon into thin slices.

Place a pan on the stove and heat it slightly, then add the bacon. Fry the bacon until crispy, stirring occasionally. Remove the crispy bacon from the pan and place it on a plate lined with a paper towel.

Pour out the excess fat from the pan, leaving only about a tablespoon. Add the shallot and thyme, and sauté over moderate heat for 2 to 3 minutes until the shallot becomes translucent. Pour in the sweet cream and cook until the cream is heated through. Season with pepper and salt to taste.

Peel, wash, and thinly slice the potatoes. Grate the cheese coarsely. Grease a deep baking dish with butter, then layer 1/3 of the potato slices in it. Sprinkle with some of the crispy bacon and half of the grated cheese. Repeat the process, finishing with a layer of potatoes. Reserve a few pieces of bacon to sprinkle on top later. Pour the hot cream mixture over the layered potatoes, cover the dish with aluminum foil, and bake in the preheated oven for about 45 minutes.

When the potatoes are tender and can be easily pierced with a knife, remove the dish from the oven. Carefully remove the foil, then sprinkle the potatoes with grated Parmesan, thyme sprigs, and the reserved bacon pieces. Return the dish to the oven for another 15 minutes, until the cheese is melted and golden brown. If needed, turn on the broiler for the last few minutes of baking.
