Ingredients

4 spoon Sugar, white

1 piece Egg, fresh

1 dl Alcohol, Rum

Prepare the pancake batter with the listed ingredients. In a bowl, use a whisk or an electric mixer to combine the eggs, milk, sugar, oil, and salt. While mixing, gradually add the flour spoon by spoon until all ingredients are mixed into a smooth batter without lumps. The batter should be runny but not watery! Finally, mix in the mineral water. Let the batter rest in the refrigerator for about 30 minutes.

Take the bowl with the batter out of the refrigerator and mix it well. Place a pan on the stove and heat it slightly, then add a little oil and spread it evenly across the pan. Pour the first ladle of batter into the pan, making sure there are no holes and that the layer of batter is as even as possible. Rotate the pan to spread the batter evenly.

Cook the pancake on one side – you can use a wooden spatula to lift the pancake and check if it’s properly cooked. Then flip the pancake and cook the other side. Place the cooked pancakes on a warmed plate. Repeat the process until you have cooked enough pancakes or used up all the batter.

Prepare the cottage cheese filling. Sort and wash the raisins. Soak them in a bowl with rum for 10 minutes. Then, in a medium-sized bowl, mix the cottage cheese, egg, sugar, lemon zest, and drained raisins until smooth.

Preheat the oven to 180 degrees Celsius. Fill each pancake with about 2 tablespoons of the filling, then roll it up. In a separate bowl, mix the ingredients for the topping with a fork. Arrange the rolled pancakes in a baking dish, placing them close together, then pour the prepared topping over them. Place the dish in the preheated oven and bake the pancakes for about 20 minutes. Once baked, serve the pancakes on plates and enjoy.

Advice
Its best to use organic lemons, as their peel is not treated with pesticides. If organic lemons are not available, soak the lemon in hot water for a few minutes and wipe it well to remove the wax, which contains toxins.
