Gratinéed Mussels

Ingredients

1 kg Shellfish, abalone

120 g Breadcrumbs, dried

3 pods Garlic, fresh

0.25 bouquet Parsley, fresh

40 g Cheese, Parmesan, grated

60 ml Oil, olive

2 pinch Salt, table

1 pinch Spices, pepper, black

Preheat the oven to 210 degrees Celsius and turn on the upper heat. In a large pot, bring about two fingers of water to a boil. Salt the water, add the cleaned mussels, and cover the pot with a lid. Steam until all the mussels open. While cooking, shake the pot several times or stir the mussels with a spoon. Once all the mussels have opened, remove the pot from the heat. Discard any unopened mussels and remove the opened ones from the pot.

Peel and finely chop the garlic. Rinse the parsley sprigs under running water, shake them dry, and finely chop them. Grate the Parmesan cheese. In a bowl, mix the breadcrumbs, parsley, garlic, Parmesan, and 30 ml of olive oil. Season the mixture to taste with pepper and salt.

Discard the empty shells and arrange the shells with the mussel meat in a shallow baking dish. Place a spoonful of the seasoned breadcrumb mixture on top of each mussel. Drizzle the mussels with the remaining olive oil before baking, then place the dish in the preheated oven for 3 to 5 minutes until the breadcrumbs are golden brown.

Serve the gratinéed mussels on plates, drizzle with the juice from the baking dish, and accompany with lemon wedges and bread.
