Gratinéed Pancakes with Hazelnuts and Raisins

Ingredients
Dough

Dressing

2.5 dl Milk, whole milk

3 spoons Sour cream

2 piece Egg, egg yolk, fresh

Filling

50 g Raisins

3 spoons Alcohol, Rum

250 g Cheese, cottage cheese

4 spoon Sugar, white

0.75 teaspoons Orange, shell

1 piece Egg, fresh

80 g Nuts, hazelnuts, roasted without oil, without salt

Steps

In a bowl with a whisk or an electric mixer, mix the eggs, milk, sugar, oil, and salt. While mixing, gradually add the flour spoon by spoon until all ingredients are combined into a smooth batter without lumps. The batter should be runny but not watery. Finally, mix in the mineral water. Let the batter rest for about half an hour.

Sort and wash the raisins. Place them in a small bowl, pour rum over them, and let them soak for 10 to 15 minutes. In a larger bowl, place the cottage cheese and mash it well with a fork. Add sour cream, sugar, egg, orange zest, and ground hazelnuts, and mix everything well. Drain the raisins, add them to the bowl, and mix with the other ingredients.

Mix the pancake batter well. Place a pan on the stove and heat it slightly, then add a little oil and spread it evenly across the pan. Pour the first ladle of batter into the pan, making sure there are no holes and that the layer of batter is as even as possible. Rotate the pan to spread the batter evenly.

Cook the pancake on one side – you can use a wooden spatula to lift the pancake and check if it is properly cooked. Then flip the pancake and cook the other side. Place the cooked pancakes on a warmed plate. Repeat the process until you have cooked enough pancakes or used up all the batter.

Preheat the oven to 180 degrees Celsius. Grease a deep baking dish with butter. Fill each pancake with about 2 tablespoons of filling, then roll it up. Place the rolled pancakes in the prepared baking dish.

In a bowl, make a sauce from egg yolks, milk, sour cream, and sugar. Mix all the ingredients well with a hand whisk and pour over the pancakes. Place the baking dish in the preheated oven for 25 minutes.

Advice
If we dont have mineral water, we can use only milk. Optionally, add a bit of baking soda to make the batter fluffier.
