Gratinéed Young Potatoes with Asparagus
Since its asparagus season and considering their numerous health benefits, were sure you wont mind another idea on how to use them. Heres a recipe for a quick and simple dish. You only need a few ingredients, which you can complement with prosciutto or pancetta if you cant do without meat.

300 g Potatoes, white

200 g Asparagus, fresh

1 piece Onion, raw

1 spoon Oil, vegetable oil, canola

1 spoon Butter, unsalted

6 slice Meat, pork, smoked bacon

6 pieces Egg, fresh

100 g Cheese, Cheddar

Steps

Preheat the oven to 230 degrees Celsius and set it to broil. Wash the young potatoes well and slice them, then place them in cold salted water and bring to a boil. Trim the tough and woody parts of the asparagus and cut them into pieces. Once the water boils, cook the potatoes for five minutes, then add the asparagus and cook the vegetables for just one more minute. Drain.

Finely chop the onion and sauté it in oil and butter for eight minutes. Two minutes before the end, you can optionally add slices of prosciutto (pancetta), then transfer everything to a baking dish and spread it evenly on the bottom.

In a bowl, beat the eggs, add half of the grated cheddar, season with salt and pepper, and mix well. Pour into the baking dish.

Layer the potato slices on top, followed by the asparagus, and finally sprinkle with the remaining cheddar. Place the baking dish on the top rack, just under the broiler, and bake for 5 minutes, or until the top layer is nicely browned. Serve the prepared dish with a bowl of salad.
