Greek Almond Cookies
These cookies will delight all those who love marzipan. Packaged in a pretty box, they make a great holiday gift, and they are also suitable for those who are allergic to gluten. The cookies do not contain flour, and in fact, you only need three ingredients to make them: egg whites, sugar, and almonds in various forms.

Ingredients

3 pieces Egg, egg white, fresh

300 g Nuts, almonds

100 g Sugar, white

3 drops Vanilla, extract, imitation

80 g Nuts, almonds, blanched

Steps

Add the egg whites to a bowl and whisk them well with a hand whisk (enough to slightly foam).

Add the ground almonds, sugar, and almond extract, and quickly mix the ingredients with a spatula until they come together and form a paste-like mixture.

Preheat the oven to 180 degrees Celsius. Line a baking tray with parchment paper. Sprinkle almond flakes onto a shallow plate.

Take a heaping tablespoon of the mixture from the bowl, shape it into a thicker, approximately 8 cm long roll with your hands, slightly curve it to form a crescent shape, then roll it in the almond flakes. Place the prepared cookie on the tray. Repeat the process until you run out of mixture.

Bake the cookies in the preheated oven for 15-17 minutes. They are done when they turn a delicate golden brown color.

Transfer the baked cookies to a wire rack and let them cool completely. Once cooled, arrange them on a plate or tray, dust with powdered sugar, and serve with a cup of coffee or tea.
