Greek Layered Spinach Pie (Patsavouropita)
A Greek pie where stretched dough is oiled and folded into an accordion shape to create the base for the filling. We present a simplified and slightly adapted recipe for Greek patsavouropita with the addition of spinach.

150 g Spinach, raw

1 spoon Salt, table

1 piece Dough, wonton

pieces Oil, olive

250 g Cheese, feta

20 g Cheese, Parmesan, grated

2 piece Egg, fresh

2 spoons Yogurt, plain, from whole milk

Steps

Preheat the oven to 180 degrees Celsius. Grease a baking dish measuring 30 x 25 cm.

Clean the spinach, wash it, chop it finely, and mix it with salt. Wait for it to release water.

Meanwhile, prepare the base for the pie. Brush each sheet of stretched dough with olive oil and fold it into an 'accordion' shape (watch the attached video for easier preparation). Cover the bottom of the baking dish with the folded sheets and bake in the preheated oven for 5 minutes.

Squeeze the spinach well, then mix it with crumbled feta cheese, Parmesan, eggs, yogurt, and pepper.

Spread the mixture over the pre-baked base and drizzle with a little more olive oil.

Bake the pie for another 45 minutes, then cut it while still hot and serve.
