Green Beans with Almonds
An excellent vegetable side dish for meat and fish. Almonds provide a crunchy texture, while lemon juice adds a pleasant freshness to the dish.

500 g Green beans, fresh

2 spoons Oil, olive

1 piece Onion, raw

pieces Garlic, fresh

pieces Lemon zest, fresh

50 g Nuts, almonds, blanched

Wash and clean the green beans (trim the ends, remove the tips, and any strings).

In a large pot, bring salted water to a boil. Add the cleaned beans and cook for 15-20 minutes, or until they are tender but still firm to the bite. The beans should simmer gently throughout the cooking process.

In a pan, toast the almonds dry. Shake the pan frequently while toasting to prevent the almonds from burning. Transfer the toasted almonds to a bowl.

Peel and finely chop or slice the garlic and onion. Heat oil in a pan, and once hot, add the chopped onion and quickly sauté until translucent. Add the garlic and sauté together with the onion for about 1 minute until fragrant.

Add the drained cooked beans and grated lemon zest to the pan. Sauté everything together for 1 to 2 minutes while stirring, then pour in the lemon juice and add the sliced almonds. Mix well and season with salt and/or pepper if needed. Serve the prepared side dish while still warm.
