Green Beans with Bacon
For many, this is the best summer side dish, served with roasted meat. However, since green beans prepared this way are very nutritious, it can be filling enough to serve them just with boiled or roasted potatoes.

500 g Green beans, fresh

120 g Meat, pork, smoked bacon

1 teaspoon Oil, vegetable oil, canola

Clean the green beans (trim the stems and remove any strings), wash them, and drain. If necessary, cut them into shorter pieces. Place them in a pot and cover with enough water to fully submerge them. Add half a teaspoon of salt to the water. Place the pot on the stove and wait for the water to boil. Once the water boils, reduce the heat slightly and cook the beans for about 10 minutes. The beans should simmer gently throughout the cooking process.

While the beans are cooking, prepare the bacon. First, cut the bacon into small pieces. Place a pan on the stove and heat some oil. Add the bacon pieces and fry them while stirring until they become crispy.

Drain the cooked beans well. Transfer them to a larger bowl and season with the fried bacon. Mix well and serve.

Advice
The beans should be cooked but remain firm. Raw green beans contain a toxic protein called phasin, which causes the clumping of red blood cells. Phasin breaks down after a few minutes of cooking. Therefore, never use uncooked green beans!
