Green Beans with Peanut Dressing
Green beans with peanut dressing is an excellent side dish for many Asian meals. Because it is so tasty and filling, it can also be a standalone meal that we enjoy as a snack at work, on a picnic, or at the beach.

Ingredients

500 g Green beans, fresh

3 spoons Peanut butter, coarse

2 teaspoons Soy sauce, shoyu, less salt

3 teaspoons Vinegar, apple

3 spoons Oil, peanut

Steps

Clean the green beans (trim the ends and remove any strings), wash them, and drain. If necessary, cut them into shorter pieces. Bring water to a boil in a pot, adding half a teaspoon of salt. Add the beans to the boiling water and cook for about 15 to 20 minutes, or until they are tender but still crisp. The beans should simmer gently throughout the cooking process.

While the beans are cooking, prepare the peanut dressing. In a small bowl, mix the peanut butter, soy sauce, and vinegar until smooth.

Drain the cooked green beans in a colander, rinse them with cold water, and drain well. Transfer them to a large bowl and drizzle with peanut oil. Mix well to evenly distribute the oil, then pour the peanut dressing over the beans and mix again. Taste and season with additional salt and/or vinegar if desired.

Advice
You can add a bit of ground chili and/or finely chopped garlic to the dressing. Sprinkle the prepared green beans with toasted sesame seeds or black cumin seeds if desired. Raw green beans contain a toxic protein called phasin, which causes the clumping of red blood cells. Phasin breaks down after a few minutes of cooking. Therefore, never use uncooked green beans.
