Green Curry with Shrimp

Steps

First, prepare the green paste. Peel the ginger root and garlic, and finely chop them. Wash the chilies, dry them, remove the seeds, and slice them into thin rings. Wash the cilantro, shake it dry, and roughly chop it. Place all the ingredients for the green paste into a food processor and blend with a little water into a smooth paste.

Remove the black vein from the cleaned shrimp tails and rinse them thoroughly under running water, then drain well. Place the drained shrimp in a bowl, season with salt, and mix well. Peel the onions, wash them, and slice them thinly. Place a pan on the stove and dry roast the ground spices. Shake the pan well several times, and when the spices become fragrant, transfer them to a bowl and let them cool.

Place a heavy-bottomed pan on the stove and heat the oil well. Fry about two tablespoons of the green paste in the oil for 2 to 3 minutes, then add the young onions and fry everything together for another 2 minutes while stirring. Add the spices to the pan and pour in the coconut milk. Mix everything well, cover the pan, and let it simmer gently for 8 to 10 minutes. Stir well several times in between.

Add the shrimp to the pan and cook them for about 6 minutes. Serve the prepared dish in bowls and offer it with rice and lime slices.

Advice
