Green Lentil Soup
This lentil soup is an Eastern Mediterranean dish that varies in color and spiciness across different parts of the Mediterranean. The soup can also be made with red or black lentils.

Ingredients

225 g Lentils, raw

30 ml Oil, olive

2 piece Onion, raw

2 pod Garlic, fresh

2 spoons Spices, cumin, seeds

1 teaspoon Spices, turmeric, ground

600 ml Soup base, chicken, cube

4 pinch Salt, table

1 pinch Spices, pepper, black

6 dl Water
Steps

Rinse the lentils under running water and drain well. Place them in a larger pot and cover with enough cold water to completely submerge them. Cover the pot with a lid, place it on the stove, and bring the liquid to a boil. Simmer the lentils gently for 10 minutes, then drain them.

Peel, wash, and finely chop the onion. Peel the garlic, crush it with a knife, and slice it thinly. Crush the cumin seeds in a mortar. Place a larger pot on the stove and heat the olive oil in it. Add the chopped onion and garlic to the oil. Add the crushed cumin and turmeric, and sauté everything together for 3 minutes. Stir continuously while sautéing.

Add the lentils, soup base, and 6 dl of water to the pot. Season with salt and pepper to taste, mix well, and bring to a boil. Once the soup boils, cover the pot, reduce the heat, and simmer covered for 30 minutes. Stir occasionally while cooking.

Serve the cooked soup in soup bowls or plates.
