Green Salad with Baked Goat Cheese
Green salad, especially when in season, is a refreshing addition to any table. Lets not always stick to the same dressings - sometimes treat it to a slightly different sauce, enhance it with a piece of baked meat or cheese, and a light summer dinner is on the table.

Steps

Clean and wash the salad. Cut or tear it into roughly equal-sized pieces, then dry them thoroughly so the dressing can really shine.

Clean the young onion and slice it thinly. Place the slices in a bowl and pour over some wine vinegar. In another bowl, mix the mustard, oil, and salt. Remove the onion from the vinegar, set it aside, and add the vinegar to the dressing ingredients. Mix well and pour over the salad. Sprinkle with the reserved onion.

Place a ceramic or Teflon pan on the stove. Cut the cheese into slices, about 1 cm thick. Place the cheese slices on the heated pan. As soon as it sizzles, carefully flip the cheese and bake on the other side.

Place the cheese slices over the salad, and also scrape up the golden crust that has formed on the bottom of the pan. Serve the salad with a piece of good black bread, such as Carinthian bread.
