Ingredients

2 teaspoons Tea, cooked

0.75 cups Sugar, white

3 pieces Egg, egg yolk, fresh

0.75 cups Milk, whole milk

0.75 cups Sweet cream

In a small bowl, mix the green tea powder with two tablespoons of sugar. In another bowl, use an electric mixer to beat the egg yolks and the remaining sugar until frothy.

Place a saucepan with milk on the stove and heat it slowly over low heat. Be careful not to let the milk boil! Just before the milk boils, remove the saucepan from the heat. Pour a few tablespoons of the hot milk into the bowl with the green tea and sugar. Mix well until a smooth paste forms. Stir the paste into the remaining hot milk in the saucepan. Then, mix the frothy egg yolks into the milk.

Place the saucepan with the mixture back on the stove and cook slowly over low heat. Cook until the mixture thickens, but do not let it boil! When a thick foam forms on the spoon while stirring, it's time to remove the saucepan from the heat. Strain the mixture through a fine sieve and let it cool completely.

In a bowl, partially whip the cream and fold it into the cooled mixture. Pour the prepared mixture into an ice cream container, seal it, and store it in the refrigerator for one to two hours. Then, place the container in the freezer. When crystals start to form, take the container out of the freezer and mix the ice cream well with a spoon. Seal the container again and return it to the freezer. Repeat the process several times to maintain a creamy texture.
