Green Tea Truffles

Ingredients

200 g chocolate, dark

2 teaspoons Tea, chamomile, cooked

1 spoon Milk, whole milk

90 g Sweet cream

45 g Butter, unsalted

2 teaspoons Powdered sugar
Steps

Chop (or finely grate) the white chocolate into smaller pieces and place them in a large bowl. In a smaller bowl, mix the milk with one teaspoon of green tea powder. Stir until a smooth paste forms.

Pour the cream into a thick-bottomed saucepan and heat it slowly over moderate heat. Once the cream comes to a boil, let it simmer for 30 seconds. Then, mix in the green tea paste and butter. Pour the hot mixture over the white chocolate. Stir well until all the chocolate is melted and a smooth mixture forms. Let the mixture cool to room temperature, then cover the bowl and refrigerate until the mixture is completely firm (about 2 hours).

In a small bowl, mix one teaspoon of green tea powder with powdered sugar. Spread the mixture onto a shallow plate. Shape the cooled mixture into truffles (see picture) and roll them in the green tea and powdered sugar mixture. Place the prepared truffles on a serving plate and refrigerate again until fully set.
