Grilled Chicken and Gouda Sandwich

500 g Meat, chicken, breasts

0.75 teaspoons Salt, table

0.5 teaspoons Spices, paprika

0.5 teaspoons Spices, thyme, dried

1.5 spoons Oil, olive

3 spoons Mayonnaise

1 teaspoon Mustard

8 slice Bread, whole grain

4 slice Cheese, Gouda

Pour oil into an oven-safe pan. Place the pan in the preheated oven for 10 minutes to allow the oil to heat up thoroughly.

Remove the pan from the oven and carefully place the seasoned chicken breasts onto the hot oil (skin side down). Return the pan to the oven for 20 minutes to allow the chicken to cook and the skin to become crispy.

Meanwhile, mix mayonnaise and mustard in a small bowl. Take the cooked chicken out of the oven and transfer it to a cutting board. Let it cool slightly. Turn on the broiler in the oven. Remove the bones (and skin if desired) and cut the cooked chicken into smaller pieces or slices.

Spread the mustard and mayonnaise mixture on four slices of bread. Layer the slices with the chicken pieces or slices. Finally, add slices of cheese and cover the sandwiches with the remaining slices of bread. Place the prepared sandwiches on a wire rack. Slide the rack into the oven just long enough for the bread to turn golden brown and the cheese to melt.
