Grilled Eggplants with Feta

Ingredients

1 kg Eggplant, raw

Steps

First, clean and wash the unpeeled eggplants. Then slice them lengthwise into approximately 1 cm thick slices. Place them on paper towels, salt them, and let them sit for 30 minutes to release water and bitter juices. Meanwhile, light the charcoal and heat the grill well.

Rinse the eggplant slices under water and drain them well. Dry them thoroughly with paper towels. Grease the grill rack well with oil, then arrange the eggplants on it. When the slices turn slightly brown on the bottom side, carefully flip them and cook the other side.

Remove the grilled slices from the grill. Arrange them on a large serving plate and lightly season with pepper. Then drizzle them with olive oil and let them marinate for a few minutes.

Wash and clean the sweet peppers (remove the stems and seeds). Finely chop them. Tear the mint leaves from the stems. First, crumble feta cheese over the eggplants, then sprinkle them with mint leaves and chopped peppers. Before serving, you can drizzle the dish with a little more olive oil and lemon juice.

Advice
Eggplant slices can also be baked on a grill pan. Instead of eggplants, you can use zucchini. Raw eggplants have a bitter taste, so its best to slice and salt them before use - this will eliminate the bitter taste.
