Ingredients

8 pieces Meat, lamb, ribs

3 pods Garlic, fresh

3 pieces Lemon, fresh, without shell

5 spoon Oil, olive

1.5 spoons Spices, coriander - seeds

Thoroughly wash the meat and dry it with kitchen towels. Peel the garlic and finely chop it. Finely grate the lemon zest. Cut the remaining two lemons in half and squeeze out the juice. Crush the coriander seeds in a mortar.

Add the grated zest, crushed coriander seeds, oil, and garlic to the lemon juice. Season with pepper and salt to taste. Use a hand whisk to mix the ingredients until a smooth mixture is obtained, then place the ribs in it. Marinate for about two hours, turning them several times in between.

Light the charcoal and wait for the grill to heat up well. Oil the grill grate, then drain the ribs and arrange them on the grate.

Grill the ribs for about 5 minutes on each side. Serve the hot ribs on plates along with your chosen side dish.

Advice
It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it thoroughly to remove the wax containing toxins.
