Steps

Cut the ostrich meat into smaller fillets or pieces of desired shapes. Wash the meat and dry it with a paper towel. Wash and dry the peppers, then remove the seeds and cut them into larger strips.

In a bowl, squeeze a tablespoon of tomato concentrate and add a tablespoon of lemon juice. Mix, add salt, oil, pepper, and a little thyme. Mix everything together and coat the ostrich meat with the mixture on both sides. Let it rest for a few hours (at least two hours) so the meat absorbs the flavors and aromas.

Prepare the grill and oil the grill grate, then heat it well. Take the marinated meat out of the marinade and place it on the heated grill. Cook on one side for about 7 minutes, then flip it and cook on the other side. Place the peppers on the grill and cook them on both sides for 5 to 10 minutes. When the meat and peppers turn brown, arrange them on plates and serve.
