Ingredients

700 ml Soup base, chicken, cube

0.5 dl Sweet cream, partially skimmed

1 teaspoon Spices, cardamom

2 pinch Spices, coriander - seeds

200 g Polenta

2 spoons Oil, vegetable oil, canola

1 piece Onion, raw

2 piece Carrot, fresh

6 pieces Tomato, red

1.5 spoons Oil, olive

1 pinch Spices, pepper, black

1.5 dl Water
Steps

First, prepare the sauce by peeling the onion, washing it thoroughly, and finely chopping it. Wash the carrot, peel it, and cut it into smaller pieces. Wash the tomatoes. Place a pot with half a liter of water on the stove and wait for it to boil. Remove the pot from the heat. Submerge the tomatoes in the boiling water, let them sit for a while, then carefully remove them with a slotted spoon. Peel them, remove the stems, and chop them into very small pieces.

Place a pan on the stove, heat the oil, and sauté the onion in it. Add the tomato and carrot, then pour in 1.5 dl of warm water. Cook over moderate heat, stirring slowly, for about 16 minutes, then season the sauce with salt and pepper to taste. Stir the sauce, remove it from the heat, and cover it.

Line a baking dish with parchment paper. Place a larger pot on the stove and bring vegetable broth and cream to a boil. Season it with salt, cardamom, coriander, and nutmeg. Reduce the heat slightly and gradually add the polenta while stirring constantly. Wait for about 2 minutes and let it simmer gently. Then remove the pot from the heat, cover the polenta, and let it sit for about 5 minutes to swell.

Spread the polenta about 1.5 cm thick onto the baking dish and let it cool completely for at least 20 minutes. First, cut the polenta into 5 x 5 cm squares, then cut them in half to create smaller triangles.

Light the grill and oil the grate well. Drizzle a few drops of oil over the polenta and grill it on both sides for about 3 minutes.

Serve the polenta triangles on plates and offer them to guests along with the prepared sauce.
