Grilled Swordfish with French Fries

Ingredients
Marinade

Steps

Cut the lemon and orange in half and squeeze the juice from all halves. First, thoroughly wash the swordfish steaks, then dry them well with a paper towel. Prepare a bowl and pour in the orange and lemon juice along with the oil. Peel the garlic, press it through a garlic press, and add it to the other ingredients in the bowl. Season the marinade with pepper and salt, then mix well. Submerge the swordfish steaks in the marinade, cover the bowl, and place it in the refrigerator for at least one hour.

Peel and wash the potatoes. Cut them into thin sticks for fries, then dry them well with a clean kitchen cloth. Next, heat up the grill.

Place a large deep pan on the stove and heat it well, then heat the oil in it. Be careful not to overheat the oil (it should not smoke)! Carefully place the potato sticks into the sufficiently hot oil using a slotted spoon. Fry them until small bubbles appear on the surface and the potatoes turn golden brown.

Remove the fried potatoes from the pan with a slotted spoon and place them on paper towels to absorb excess fat. Then keep the fries warm. Take the steaks out of the marinade, place them on the hot grill, and baste them once or twice with the marinade while grilling. Grill them for about 5 minutes on each side until the meat is seared.

Serve the grilled swordfish steaks on plates along with the fried potatoes, seasoning the fries with salt to taste. Present the swordfish with fries.

Advice
Swordfish can also be prepared in a grill pan. Fry in a large amount of fat. The food must float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The frying fat is hot enough when small bubbles form around a wooden spoon handle.
