Guilt-Free Chocolate Brownies
Delicious chocolate brownies made with sweet potatoes. The taste of the sweet potatoes is not noticeable in the dessert, but the starch makes the batter slightly denser. I used sweet potatoes as a sweetener and also for their nutritional value, as they are rich in fiber, vitamins, and minerals.

Ingredients

120 g Sugar, brown

125 g Flour, oat

100 g Cocoa, powdered, unsweetened

1 handful Nuts, pecan
Wet ingredients

200 g Butter, unsalted

50 g Oil, plant, coconut

80 ml Syrup, maple

1 piece Sweet potato

200 g Apple, fresh

pieces Flaxseed

1 teaspoon Vanilla, extract, natural
Steps

Peel the sweet potatoes and cut them into small cubes. Place them on a plate, sprinkle with water, and cover with a damp paper towel. Microwave for 5 to 7 minutes until softened (see tips).

Mash the cooked sweet potatoes with an immersion blender into a puree. If the mixture is too thick, add a teaspoon of water.

Prepare the flax egg. In a small bowl, mix ground flaxseeds with water. Let it sit for at least 5 minutes so the flaxseeds can absorb the water and thicken.

In a larger bowl, mix all the dry ingredients (except for the pecans).

Add the remaining wet ingredients to the bowl with the mashed sweet potatoes. Mix well.

Add the dry ingredients to the wet mixture. Stir until you get a uniform batter, then pour it into a baking dish lined with parchment paper (23 x 17 cm). Spread the batter evenly across the dish and smooth the top. Sprinkle chopped pecans over the batter.

Bake the brownies for 30 minutes at 175°C (350°F).

Once baked, let the brownies cool in the dish for at least 30 minutes. Once cooled, cut into pieces. Optionally, drizzle melted dark chocolate over the top.
