Hake with Leek and Tomato

Ingredients

100 g Leek

600 g Fish, swordfish

60 g Oil, olive

3 spoons Alcohol, Wine, White

200 g Tomato, concentrate

2 pinch Salt, table

1 pinch Spices, pepper, white

Clean the leek and rinse it thoroughly under running water. Cut it lengthwise in half and slice both halves. Rinse the hake fillets under running water and dry them with kitchen towels. Cut them into bite-sized pieces.

Heat oil in a pan and sauté the leek while stirring. Once the leek becomes translucent and soft, add the hake pieces to the pan and pour in white wine. Stir, lightly season with pepper and salt, and wait for the wine to evaporate.

Squeeze concentrated tomato from the tube into a bowl and mix with a few tablespoons of water to create a thinner paste. Add this to the pan. Mix the ingredients well and cook on moderate heat for another 5 minutes.

Serve the prepared dish with roasted polenta or fresh greens.
