Ham in Pastry
Even if we usually watch our calories, we treat ourselves to ham in pastry at least once a year – for Easter. Serve it with apple horseradish.

Ingredients

1 kg Meat, pork, smoked ham

60 g Mustard

400 g Flour, Whole wheat

20 g Yeast, dry

3 spoons Milk, whole milk

1 teaspoon Sugar, white

0.5 teaspoons Salt, table

50 g Butter, unsalted

3 dl Milk, whole milk

1 piece Egg, fresh
Steps

If the ham is not yet cooked, place it in a pot and cover it with cold water. Cook it on medium heat for one hour. Once cooked, let it cool in the water it was cooked in.

While the ham is cooking, prepare the dough. Crumble the yeast into a cup, add a teaspoon of sugar, 2 tablespoons of lukewarm milk, and a teaspoon of flour. Mix, cover, and let it rise for ten minutes. Sift the flour and pour it into a bowl. Add salt around the edges and make a well in the center. Pour the yeast mixture into the well, mix it with a little flour, and let it rise for another ten minutes.

Melt the butter in a pot with milk, let it cool to lukewarm, and pour the mixture over the flour. Knead the dough until it is smooth and elastic and does not stick to your hands or the bowl.

Shape the dough into a ball, cover it, and let it rest in a warm place until it doubles in size (about one hour). Then knead it well, shape it into a ball again, cover it, and let it rise once more.

Preheat the oven to 180 degrees Celsius. Roll out the risen dough on a floured surface to about 2 cm thick. Place the dried ham in the center, spread mustard over it, and wrap it with the dough from all sides. Press the edges together firmly so the dough does not open during baking. Place the ham in pastry in a baking dish with the seams on the bottom. Before baking, brush it with beaten egg on all sides and make a small hole on top to allow steam to escape during baking.

Bake the ham in pastry in the preheated oven for about one hour. After 20 minutes of baking, cover it with baking paper, which you remove in the last few minutes of baking so the dough browns nicely and gets a golden brown color.
